I've been making myself the Medifast oatmeal box recipe for muffins until today, when I tried another muffin recipe online that someone said they got from their coach. The recipe calls for scrambled eggs, which deterred me from making them for several weeks actually. Weird!! But I tried it and let me emphasize the following statement:
THESE MUFFINS ARE DELICIOUS!!! POSSIBLE MY FAVORITE MEDIFAST FOOD OF ALL!
Here is the recipe:
1 packet Medifast scrambled eggs
1 packet Medifast pudding
4 packets Medifast oatmeal
1/2 cup sugar-free syrup
3 tsp. baking powder
1 1/4 cup water
Preheat oven to 350*
Combine egg powder, syrup, and water. Let stand at least 30 minutes.
Combine the pudding and oatmeal powders, and baking powder. (I blended mine up in my mini food processor.)
Mix the oatmeal mixture into the egg mixture.
Spray standard 12 muffin pan and then pour muffin batter in.
Bake at 350* for 15-18 minutes.
Makes 12 muffins (6 meals of 2 muffins )
Here are my comments:
*Very delicious pudding taste (not Medifast tasting)!
*I used regular scrambled eggs, vanilla pudding, and brown sugar & maple oatmeal.
*I wonder how different flavor combinations would turn out!! (Try and let me know)
*The muffins came out nice and round, but flattened a bit after resting. They were less tall than a tuna can.
