I was excited to find the recipe for oatmeal muffins on the side of the box, mainly because I hated the oatmeal. It was my mom's favorite so I ordered some but I don't like regular oatmeal either. Without thinking during storing my Medifast, I threw away the boxes of oatmeal so I lost the recipe. Luckily I found it online but I keep having to refer back to it. So here it is, handy as can be:
Regular Medifast Muffin Recipe
(you get the whole batch to yourself!)
1 packet Medifast oatmeal
1/2 tsp. cinnamon
1 packet Splenda (I just use a teaspoon because I don't have packets!)
1/3-1/2 cup water
1/8 tsp. baking powder
1/2 tsp. vanilla
Mix up the dry ingredients, then add the wet and stir. Bake at 350* for 12-15 minutes in a prepared muffin pan.
Here are my pointers:
*Have 1/2 cup of water in your measuring cup, and add it slowly until the consistency is right. I think 1/3-1/2 is too much but that's what the recipe says.
*Some people say let the batter sit for 10-15 minutes but I never do.
*Use a mini muffin tin.
*The tops will not be round. They will not taste awesome. But you will get used to them and actually like them eventually.
